· Heat the olive oil in large non-stick pan over medium heat. Add onions and cook until tender.
· Place the salmon and grapefruit juice with segments in the pan. Cover and simmer over low heat for 6–8 minutes or until the fish is cooked to taste.
· Serve salmon with pan sauce and garnish with grapefruit segments.
