Gazopacho Soup

Serves: 2


5  medium tomatoes  or 250 gms

1 medium onion  40 gms

½ cucumber (finely chopped)  or 25 gms

½ capsicum (finely chopped)  or 25 gms

1 slice of multigrain bread  or  20 gms

Ice cube for chilling

2 cups of ice water or  400 ml

1 tsp of oil or 5 gms

1 clove of chopped garlic

1 tsp lemon juice or 5 gms

Salt and pepper to taste

Method of Preparation:

1) Wash & chop tomato. Pressure cook till 3 whistles. Blenderize and keep aside.
2) Chop onion and garlic
3) Heat oil in a pan. Add chopped onion and garlic. Cook well. Add blenderized tomato. Cool.
4) Add cucumber, capsicum, lemon juice, salt and pepper powder.
5) Add ice cubes for chilling. Serve with grilled multigrain bread croutons
