Bake your own zucchini bread

Serves: 10

Ingredients:
• 1 ¼ cups (190 gms) shredded zucchini
• 2 Tbsp coconut oil
• 1 ¼ eggs
• 1 ¼ tsps vanilla extract
• ¼ cup (40 gms) palm sugar
• 1 Tbsp maple syrup or honey
• 2/3 cup (86 gms) whole wheat flour
• 2/3 cup (60 gms) oat flour
• 1 Tbsp ground flaxseed
• ½ Tbsp cinnamon
• ½ tsp baking soda
• Less than 1/8 tsp baking powder
• ½ tsp salt
• ½ cup chopped walnuts (58 gms) (optional)
Method:
1. Preheat the oven to 350 degrees. Spread some oil all over the loaf pan and set aside.
2. Next, blend the zucchini, oil, eggs, vanilla extract, coconut palm sugar, and maple syrup or honey.
3. In a separate bowl whisk together the remaining dry ingredients, except nuts.
4. Add the dry ingredients to the zucchini, oil, sugar mixture and mix well. Lastly, add in the chopped nuts.
5. Pour the batter in a large loaf pan and place in the oven.
6. Bake for 45-55 minutes or until a toothpick inserted comes out clean. Cool for 5 minutes before removing from the pan.
